Freshly prepared, with hand prepped basil, Pestle + Mortar’s green pesto is high in olive oil and basil and sweetened with mature Irish cheddar and Grana Padano cheeses. Our red pesto is also high in olive oil and made with top quality fresh red peppers and sundried tomatoes.
Our pestos were developed by our team led by Executive Chef Thomas Haughton. We’ve also been working with the multi-talented Jennifer Oppermann (@jenniferocooks) to develop recipes to show just how versatile this ancient sauce can be.
In 2021 we have branched out into growing our own basil, on site at our hub in Galway. Grown in our new vertical digital farm, our fantastic team have trained up in how to care for it. It will need no pesticides and, as it only has to travel through a couple of doorways, we think it will perhaps be the freshest pesto in Ireland.
You’ll find our pestos on shelf in selected Tesco Ireland stores, Spar Ireland and in Joyce’s Supermarkets throughout Galway city and county.
