Baked and Crunchy Cauliflower Bites with Green Pesto
1 whole head of cauliflower washed and cut into bitesized pieces
60g of fine white breadcrumbs
20g grated Parmesan cheese
2 eggs whisked
½ tsp garlic salt
½ tub of green pesto
Low fat spray oil
Preheat the oven to 190°c. Grease a large baking tray (you may need two so not to overcrowd the tray as this will prevent crisping).
Put the breadcrumbs in a shallow bowl. Add the garlic salt and the parmesan cheese and mix well.
Dip each piece of in the whisked egg, shaking off excess as if it is too wet this will prevent the crumb from sticking. Then dip each piece into the breadcrumb and parmesan mix, making sure that all sides are coated evenly.
Lay them on the prepared baking trays spaced out so they cook evenly. When all the coated pieces are on the baking tray or trays, place them in the heated oven for 22 to 25 minutes.
Remove the tray from the oven and allow to cool for 3 minutes or so. Drizzle the pesto over the top and serve immediately.
These coated cauliflower bites can be eaten as a starter or sharing with friends. Add some courgette noodles and make a meal with them!
