Beef Burgers with Pesto
680g minced beef
1 tsp salt
½ tsp ground black pepper
Oil for cooking
Add the minced beef to a mixing bowl, add in the salt and pepper, mix it through the mince thoroughly. Shape the burgers in to 1 inch thick rounds.
Heat a frying pan with a small amount of oil, add the burgers and cook until they are golden brown, about 4 minutes on each side ensuring each one is cooked through.
Ingredients (for dressing the burger)
½ red onion sliced thinly in rounds
Juice of ½ a lemon
1 mozzarella pack (150g) sliced into rounds
1 large tomato sliced in to rounds
8 lettuce leaves (any variety)
4 burger buns sliced in half horizontally
4 tbsp green pesto
Stack and dress it
Put the sliced onions in a ziplock bag and squeeze in the lemon juice, seal and set aside to pickle (about 20 minutes).
Add the mozzarella on top of the cooked burger and grill until it is melted.
Stack the burger buns with the beef burger, lettuce, pickled red onions and sliced tomato. Spoon the pesto over the top of the burger, put the bun top on and serve immediately.
